Looking for an easy side dish with some Fall flavor? Look no further. This side dish is packed with healthy starch, antioxidants, and fiber for a wholesome option that will round out any meal.
Ingredients:
2 Sweet Potatoes, halved and sliced into eighths
2 Bartlett Pears, quartered and sliced into thirds
2 Red Apples, quartered and sliced into thirds
1/4 cup Olive Oil
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Cloves
1/4 cup Sliced Almonds
Steps:
1.) Preheat oven to 400 degrees. Scrub/wash the sweet potatoes, pears, and apples. Cut as instructed. Spray a rimmed baking olive oil.
2.) Mix sweet potatoes, olive oil, and spices in a large bowl. Ensure potatoes are well-coated. Spread onto the baking sheet and season with salt (coarse is preferred) and pepper. Roast, tossing occasionally and until crisp and tender, about 20-25 minutes. Set the mixing bowl aside as is.
3.) Place pears and apples into the large bowl and stir to coat mixture evenly with the remaining oil and spices. Add mixture to the potatoes. Roast for an additional 10 minutes.
4.) Top the roasted mixture with sliced almonds. Turn the oven to broil and broil final mixture on the top shelf for 2-3 minutes, stirring intermittently.
